Abstract

This research aims to determine the influence of taste, appearance, aroma and texture factors on Kang Dedek egg martabak culinary delights in Luwuk City. This research was carried out in Luwuk City, Banggai Regency, Central Sulawesi, which coincides with Kompo Village, the time for carrying out this research was carried out for 3 months, namely June - August 2024. The population in this research were all buyers of Kang Dedek egg martabak culinary delights. Meanwhile, the number of samples used was 30 respondents. The data analysis method used is qualitative descriptive analysis, which describes all consumer taste responses regarding the taste, appearance, aroma and texture of Kang Dedek's culinary egg martabak in the city of Luwuk. The results of the research are that the taste factor is 60% in the very like category, 36% in the like category and 4% in the dislike category. The appearance factor is 47% in the really like category and 53% in the like category. The aroma factor is 77% in the really like category and 23% in the like category. The texture factor is 74% in the really like category and 26% in the like category.
